This cake was so much fun to bake and design, I was really getting into the Christmas mood with this one :) I made vanilla sponge cakes and cut them to size and stacked them on top of each other. I covered the cakes with butter cream and then I placed the rolled fondant on top. I then air brushed the cake red and placed a bobble on top. I then piped white royal icing on the bobble to give it a fluffy effect. I hope you like the picture of my cake and thank you for reading.

This is one of my Christmas cakes for 2011. I have made a rich fruit cake covered with marzipan and rolled fondant. I made my igloo with rolled fondant and the same with my penguins and grey seal. I piped on Merry Christmas and then hand painted the writing with red food paste. I also made some snow balls for the penguins in case they fancied a little snowball fight :) Around the bottom of the cake is blue and white fondant balls I felt this just gave the cake a little more colour. Thanks for reading guys x

Hey boys and girls! About a month ago I was contacted by a lady who was looking for a dairy free cake for her friend who is intolerant to butter. I said yes of course I can do it, I know a recipe that we had used before at The Swan which didn't have any butter in it. The lady then told me she wanted the cake to be made in the shape of a car!!! I did think to myself OMG!! how am I going to do this the sponge is very soft, will it carve OK and will I be able to do this? But I took on the challenge and made the car. The lady was really pleased and so was I, this is the first car I have made and I'm really proud of it.

If your not in the Haverhill area you can still get my article up on the Haverhill Weekly website where you'll find the recipe and a little history of the Yule Log and what it symbolises. This cake is so light as it has no flour in the recipe and it tastes wonderful too. Hope you enjoy the pictures and it may inspire you over the christmas holidays to get baking.
