Blueberry Muffins

I made these blueberry muffins for the beauty salon A revolution last week.  To be honest with you I wasn't  too keen on muffins before I made these, but that's because I had only tried the type you buy in the supermarkets which really put me off.  These I must say are a hundred times better than shop bought. I am sharing the recipe with you then you can see for yourself how much better homemade muffins can be. Hope you enjoy making them. Hannah's Buns signing out :)

280g Plain flour
1 tbsp Baking powder
Pinch of salt

150g Frozen blueberries
2 Eggs
250ml Milk

1 finely grated lemon rind

  • Preheat oven 200'C

  • Sift together flour, baking powder and salt into a bowl then stir in the sugar and blueberries

Passion fruit cupcakes by Hannah's buns

Hannah's Buns passion fruit Cupcakes were made for A revolution beauty salon last week. These reminded my of when I worked at The Swan in Lavenham as I made these cakes for afternoon tea on occasions. I really like the flavour of these cupcakes because they are so different a sharp flavour but sweetened with the sweet butter cream.  I did two different styles one type cut in the middle and filled with passion fruit butter cream and the others were brushed with apricot glaze and turned in desiccated coconut then cut and filled with the butter cream.

Pirate ship cake

A lot of work went into this cake but I was so pleased with it when I was finished and I hope you like it too.  I first made the pirates out of rolled fondant one with a patch and black teeth the other with a gold earring and a wooden leg.  I then made a treasure chest, sails for the ship and no pirate goes without a naughty parrot companion.  Next I made two big rectangle cakes and once cooled I cut and carved them into the desired shape.  Once I had covered the whole ship with butter cream twice I coloured the fondant and rolled it out and covered over the whole cake.  Then when I had trimmed the fondant I used a scalpel and turned the fondant into wooden panels.  I then made port holes and painted them a outline of gold.  My wonderful partner  cut me the wood for sails to sit on and then I covered the board sea blue with royal icing and piped some waves on too.  I added the sharks for a little extra to my design. Thanks for reading :)
